Mushroom Cauilflower Rice Skillet

This is one of my favorite things to make for dinner. It's very easy, low-carb and takes under twenty minutes. I cut up the head of cauliflower and put the chunks in the food processor. Then I put all the rice in the skillet and add the remainder of the ingredients. I also add a little balsamic vinegar with the olive oil. The Recipe I used was from Pinterest click the button below to view. Recently I have also sautéed chicken and added it in for extra protein.

This is another cauliflower recipe I guess you could say I love cooking with cauliflower... This is another recipe I came across on Pinterest. It was super easy to prepare and tasted delicious you could add salsa or balsamic vinegar on top for more flavor.

    • Must start with the Brussel Sprouts and the Dip Duo then for sushi I love the 'Osaka Style' Pressed Sushi, even though all the sushi is fantastic.​

  • Sushi Axiom 

    • I am in love with the Spicy Miso Ramen! It is a lot of food but take it to go and eat on it for the rest of the week! I also love the Summer Roll it is so fresh and does not have rice!  â€‹

This is a delicious smoothie that tastes great after a hard workout. I usually make a fruit smoothie with protein powder my favorite being DaVinci Laboratories of Vermont Right Whey Protein Vanilla flavor, and unsweet almond milk. I tried this recipe and loved it even though no protein powder is used. It is still packed with lots of protein and tastes great. 

Shrimp Pesto Truffle Pasta

This my new favorite pasta dish! When I stopped in Atlanta we went to Ponce City market and I bought truffle pasta, pesto, balsamic vinegar and parmesan cheese. All of this was homemade and reasonably priced! The bottle of balsamic was only $8... 

When I made this dish for the sauce I sautéed onions, garlic, and mushrooms with olive oil and balsamic vinegar. I thawed the shrimp and then added them to the sauce. I then mixed the pasta in with the sauce and added parmesan cheese and chopped rosemary on top.

    • One of Dallas's newest restaurant's to attend with your girlfriends! â€‹Tik Tok is where I first saw it. The interior and exterior is pink and picture perfect! The food is good but you mostly attend for the atmosphere. 

  • The Henry

    • Whether you are looking for brunch or dinner The Henry is the perfect spot. Located in the heart of downtown it is a must try!​

  • Sixty Vines 

    • Part of the Crescent Hotel this Italian restaurant is delicious. You sit in the courtyard  of the hotel and it is beautiful when the weather is nice​. Indoor seating is available as well. 

  • Bubba's 

    • This is the go-to southern fried chicken restaurant. Whether you are dining in, enjoying  the classic diner or placing a takeout order for a party it will never disappoint!

Pan Seared Salmon with Avocado Cream Sauce 

This dish is soo good and so easy to make! I added some white sweet potato noodles that I sautéed with olive oil and balsamic vinegar. I used dairy free half and half and it still tasted just as good!

Gazpacho! 

AKA cold soup! This is so refreshing when the summer heat starts to kick in! For protein I add in shrimp!

Instant Pot Parmesan Garlic Artichoke

Sadly this didn't work out exactly how it should have. I melted the cheese in garlic into the artichoke by steaming it in a pan with half a cup of vegetable broth like the recipe says. Though the artichoke leaves were still tuff and not cooked... so I ended up have to boil it in water for about an hour like I usually cook them. 

Spicy Shrimp with Cauliflower Mash and Garlic Kale

This was an ok dish... If I make it again I'm going to add more spice to the shrimp and use sharp cheddar cheese in the mash.

My favorite coffee shops in Auburn...

  • Ross House

    • It's hard to live right next door to one of the best cinnamon rolls in the world. â€‹Not to mention it's one of my favorite places to study! Their coffee is amazing and I love their sandwiches for lunch! 

  • The Bean

    • Another one of Auburn's famous breakfast cafes! They have breakfast casseroles, cinnamon rolls and maybe the best avocado toast I've ever had... â€‹

  • Coffee Cat 

    • This is connected to the Hound and it's where the Hound gets their coffee! They have amazing breads and I love their almond and coconut milk! â€‹

  • Well Red​

    • Auburn's newest coffee shop and wine bar! I enjoy studying there with my latte during the day and meeting friends in the evening to try some of their wines from around the world!

  • The Hound 

    • In my opinion the best food in town, from the homemade pepper jelly to the delicious meat you will never be disappointed. 

  • Acre​
    • Another great dinner spot. It's my second favorite place in town following the Hound. â€‹â€‹

  • Big Blue Bagel

    • If you make It in before 11 the breakfast is amazing but lunch does not disappoint either, You can get any kind of bagel with their homemade cream cheese!​

  • Hamilton's 

    • This is one of my new favorite places! I have only been once but we had the spinach dip, and the fried green tomatoes and shrimp to start. For dinner I got the ribeye! Everything was absolutely delicious! 

  • Amsterdam 

    • I finally went to the actual restaurant with my parents! I had the steak and it was amazing! They also have a food truck on campus and it's my favorite! I love the turkey wrap and the crab cake with the sweet potato chips! â€‹

  • Ariccia Trattoria 

    • I always eat here when I stay in the Auburn hotel the dinner is very good! â€‹â€‹

    • I studied abroad in the town in Italy that this restaurant is named after.

  • Live Oaks

    • I've never had anything on the menu I didn't like...To start the spinach artichoke dip â€‹is amazing! For dinner I love the Pan Seared Ahi Tuna or the Seafood Pasta! 

  • Lucy's 

    • This is one of Auburn's newest restaurants! â€‹They have everything from brunch to dinner! I have been for dinner and had the short ribs served with mashed potatoes and Brussel sprouts. 

    • My friend and I went for Easter brunch and I had fried chicken and waffles Eggs Benedict and a Bloody Marry! â€‹

  • Mikata

    • My friend and I discovered this little sushi restaurant! It's like a Hibachi where you can sit in front of the stove and they cook right in front of you! We were in hurry so we sat at the bar, but the roll I had was so the Lutzie Roll and it was delicious! â€‹

  • Takoyaki Restaurant 

    • My senior year roommate and I â€‹discovered this place when we were looking for sushi on a delivery app! We have ordered it many times and dined in too. Our favorite thing to get is the Sushi Combo Box and I always get a side of Noodles! 

  • Beyond the Wok 

    • This Chinese and Sushi spot opened during 2020. I have dined in and had their take out! I am a fan of their rice and rolls and cannot wait to try their Chinese food. The Spirit Bomb appetizer is a must have! Their prices are very reasonable as well. ​

Smoked Salmon Breakfast Bowl 

This is amazing especially after a good workout! I did not add the potatoes, but it probably will be just as good with them. I added green onion, tomatoes and garlic with the spinach and mushrooms sautéed. I could of added more paprika. I topped it with feta cheese, salt and pepper and fresh parsley.

Maple-Glazed Sheet Pan Seared Salmon with sweet potatoes & broccoli 

This was so good! Possibly the best salmon I've ever had. I added balsamic vinegar of course!

Take out Fried Rice plus Sautéed Sweet Potato and Veggies

I used the rest of my take-out Fried Rice and sautéed various vegetables including a sweet potato and half an avocado.
